We met her for lunch yesterday at Skillet Diner. We split lunch, and she wisely chose the Kale Caesar instead of fries as our side. I was a little wistful ? I've said no to fries maybe one other time in my life. But love demands sacrifice, so I went along.
Of course, it was no sacrifice. Curly, bright green kale with garlicky Caesar clinging to the ridges, every forkful a hit of winter vitamins. I made the kids a giant vat of white rice for lunch today and got busy making this for myself. I'm tracking my calories lately, and apparently a plateful of this salad will deliver over 800% of your daily vitamin A. I know you don't need that fact to entice you, though.
These days, I often have a bag of Trader Joe's washed kale around. When the farmers markets open, I'll commence with washing it again. If you have dino (aka lacinato) kale around, that's even more delicious here, but more expensive and a little harder to find. (Have I mentioned that our house in Bellingham is 5 minutes from Trader Joe's? It's rough.)
Kale Caesar with Rye Croutons
Serves 4
For salad:
1 large head kale, washed, spun dry, and chopped
4 slices dense rye bread
olive oil
Parmesan or manchego cheese, shaved off with a vegetable peeler
For dressing:
1 large clove garlic
2 anchovies
1 tablespoon Dijon mustard
1 tablespoon Worchestershire sauce
1 tablespoon mayonnaise
juice of 1/2 lemon
1/4 cup olive oil?
freshly ground pepper
pinch of kosher salt?
To make dressing, put all ingredients into a beaker and stick your immersion blender in there. (Or use a food processor.) Add more of anything to taste or thin with a little water if it's too thick.
To make croutons, heat a castiron griddle or pan over medium-high heat. Brush bread with olive oil and fry until golden brown on both sides. Cut into cubes.
Toss kale with croutons, cheese and dressing (maybe not all of it), saving a bit of everything for the top.

?Why is he a hero? It?s because he made the impossible become possible,? says George Hou, mass media lecturer at I-Shou University in Taiwan.
Taiwan raises relatively few sports heroes as students on the newly industrialized island focus more on conventional careers. Taiwan?s political archrival China, with more economic clout and diplomatic support, also asks that world sports bodies limit Taiwan?s profile.

High threshold aside, Mr. Lin?s performance is likely to add points to basketball?s popularity among Taiwanese. Baseball leads other sports in Taiwan, both in the field and on television, but one in four Taiwanese follows basketball, Lee says. That means more than 5 million fans.
Taiwan has a seven-team men?s professional league, while NBA games dominate sports channels in the baseball off-season. The NBA has held marketing events in Taipei to boost the fan base. Men, about two-thirds of those fans, can be found shooting hoops on any Taiwanese school campus with a court.
The 23-year-old, 6-ft. 3-in. point guard helped the Knicks to five straight victories this month. He has averaged more than 20 points per game since starting for the team this month, chalking up 38 in one against the Los Angeles Lakers.
It wasn?t easy to get there. The NBA?s first Taiwanese-American player had joined the team at Harvard University without a scholarship and missed the 2010 draft before signing with the Golden State Warriors. The Warriors kicked Lin down to a minor league team three times before he earned a foothold. He was barely hanging on with the Knicks as well until getting a key chance to play during an otherwise poor game on Feb. 3.

Natural gas wells leakier than believed

Wells that pump natural gas from the ground in Colorado have leaked about twice as much gas into the atmosphere as previously thought, a new study finds.
That could tarnish gas?s image as clean source of energy. Natural gas, made mostly of methane, does give off less carbon dioxide than coal when burned. But methane itself strongly warms the atmosphere, which means even relatively small releases can have a big impact on the climate.
?We?re seeing raw natural gas in the atmosphere,? says Gabrielle P?tron, an atmospheric scientist at the National Oceanic and Atmospheric Administration and the University of Colorado Boulder. Her team reports the new findings, based on data gathered in 2007 and 2008, in an upcoming issue of the Journal of Geophysical Research.
P?tron and her colleagues monitored air quality near Denver using a 300-meter tower. NOAA maintains a network of such towers across the country. This one lies southwest of the Denver-Julesburg Basin, an area that feeds more than 20,000 natural gas wells.?
When winds blew in from the basin, levels of methane detected by sensors on the tower spiked. Landfills, cattle feedlots and wastewater treatment plants probably belched some of the gas into the sky. But methane from gas wells was accompanied by other components that allowed it to be fingerprinted and separated out in the analysis.
These measurements suggested that about 4 percent of the methane in the gas wells was leaking. Previous studies by the Environmental Protection Agency and by industry groups pegged this loss at between 1 and 2 percent. But the earlier estimates were done by measuring leakages from individual pieces of equipment.
?You tend to underestimate things when you do that kind of bottom-up approach,? says Robert Howarth, a biogeochemist at Cornell University.
Last year, Howarth found higher-than-expected levels of methane being released from wells that extract gas from shale ? a process called hydraulic fracturing, or fracking. His estimates, reported in 2011 in Climatic Change, suggested that extracting shale gas is substantially worse for climate change than mining coal.
P?tron hasn?t made this comparison. Her main concern, she says, is to work with the gas industry to keep methane out of the air.
Kathleen Sgamma of the Western Energy Alliance in Denver says gas wells in the area have already made some changes since the data used in the new study were collected that should cut down on leakage.

Rising star Molly Ranson gets bloody in 'Carrie' (AP)
NEW YORK ? This much is clear as Molly Ranson prepares for her latest role: There will be blood.
Not a lot, perhaps. Not buckets. But just enough. After all, there has to be some of the red stuff if you're playing the title role in a re-imagined musical based on Stephen King's novel "Carrie."
"It'll look good. It'll look real," says Ranson, the 22-year-old actress who is playing the bullied teen with telekinetic powers in the off-Broadway remake at MCC Theater. "It's going to be done really beautifully and subtly ? artistically, kind of abstract."
The scent of blood will certainly be in the air, no matter how it's handled onstage. The original musical "Carrie" was actually booed by some in the audience when it appeared on Broadway in 1988 and lasted only five performances after opening night, losing $8 million and becoming the most expensive flop in Broadway history at the time.
But Ranson, sipping lemon-ginger tea at a downtown cafe on a recent morning before heading into the nearby Lucille Lortel Theatre for rehearsals, seems completely unworried about the musical's horror-story history.
"People should come to it with new eyes and ears and be open to a completely new experience," she says. "If they loved the original, I think they'll love this, but they should know it's not the original."
The re-imagined "Carrie" has a bit of old and new. The original creative team ? Lawrence D. Cohen, Michael Gore and Dean Pitchford, who were responsible for the book, music and lyrics ? have reunited under the baton of a newcomer: director Stafford Arima, who also helmed "Altar Boyz."
More than half the songs are new, the structure has been changed and the story is told from a different point of view. The cast is also new, of course, with Tony Award nominee Marin Mazzie playing Carrie's religiously fanatical mother, the part played by Betty Buckley onstage.
And yet so much rests on the slender shoulders of Ranson, a petite, polite New Yorker with a disarming smile who is making her professional debut in a musical. One thing in her favor is something she shares with Carrie: Underestimate her at your peril.
Ranson already has two big Broadway credits to her name ? "Jerusalem" opposite Mark Rylance and "August: Osage County" ? and two high-profile turns off-Broadway in "The Burnt Part Boys" at Playwrights Horizons and the musical "Jane Austen's Pride and Prejudice" in Rochester, N.Y. She also is road-tested, having performed "August" in London and Sydney.
She can do it all ? comedy, drama, singing, dancing, stage and film. She found herself in such demand that she lasted only a few months at New York University during her freshman year before taking a leave of absence to be on Broadway. Oh, and she also just shot her first film, the indie "Franny," playing a promiscuous teen who is murdered and stuffed in the back of a car.
Ranson is pinching herself, but very quietly. "I guess I didn't really think about it that much," she says. "If you think about it, you'll weird yourself out. I'm just kind of going with the flow and enjoying every moment."
While attending New York City's LaGuardia High School, the so-called "Fame" school, Ranson won herself an agent, Bill Timms of Peter Strain & Associates. A friend recommended he check out the then-15-year-old in a school production of "Hair."
"She didn't have a big part, but there was something about her," Timms recalls. After meeting her and her down-to-earth mom, he invited the talented teen into the studio to read and sing. "I thought, `This girl is something special.'"
While most agents might be loath to get a client involved in anything as infamous as "Carrie," Timms knows better. He was well aware of the short-lived original: He saw it four times.
That musical ? based on the 1974 King novel, which was turned into a 1976 film directed by Brian De Palma starring Sissy Spacek ? was a campy mess, mixing the sound of squealing pigs and smeared blood in one scene, laser beams in another and leather-clad dancers in a third.
Timms knew it was bad, but it had promise and he wasn't scared of revisiting it. "I'm one of those people who says, `Let's explore.' It's always better to have options," he says. "I did know its history and mentioned it to Molly. But like the wonderful client that she is, she trusted me. She said, `Yeah, let's go for it.'"
Ranson, who loved De Palma's movie, acknowledges that she had never heard a musical had been made of the material, much less its gory death at the hands of some critics, one of whom even complained that the stage blood looked like strawberry ice cream topping. Ranson thinks the story seems incredibly relevant now.
"Really, at its core, it's the story of a girl who's trying to fit in. It's the story of an outsider, which I think everyone can relate to in one way or another. Especially now, with all this bullying," she says. "It's kind of a great time to be doing this."
Arima, the director of "Carrie," says he had already cast Mazzie as Carrie's mother when he began searching for someone for the title character. He happened upon a YouTube clip of Ranson singing "Back to Before" from the musical "Ragtime," which coincidentally was the same song Mazzie sang when the show debuted on Broadway.
Arima says the two actresses share a similarity of vocal ability, energy, tone and look. He passed her name on to the casting team and Ranson came in one day in late 2009, nailing her audition.
"There was something captivating and spellbinding about her," he says. "There was something fresh, there was something raw, there was something immediate about her audition."
Cohen, the playwright, recalls being increasingly frustrated as the casting progressed. "We saw people who could sing the part, but couldn't act it," he says. "There were people who could act it, but who couldn't sing it."
Eventually, the planets seemed to align: "Molly walked into the room and she had that Carrie quality," he adds. "It turned out she could act it like crazy and she could sing it like crazy."
Growing up on the Upper West Side, Ranson was raised on movie musicals and Broadway records. Her first love was ballet, which led to acting. "So far, so good," she says, smiling.
The path she's taken ? putting off college and virtually starting her professional career under the bright Broadway lights ? comes with high risk, but Arima says it's working for Ranson.
"For some actors, being thrust into that spotlight so early can do two things: One can shrivel from it or be fearful of the experience, or one can thrive" he says. "I think Molly ? though she is a humble spirit ? loves a challenge."

Transportation boosted to top of political agenda
WASHINGTON (AP) ? After years of procrastination, the White House and Congress have suddenly boosted a long-term plan to improve the nation's roads, bridges and transit systems to the top of the political agenda.
This week the House and Senate are set to take up vastly different bills providing a blueprint for shoring up the nation's aging transportation system. Lawmakers are driven in part by a desire to show voters a major accomplishment in an election year when regard for Congress is at rock bottom. They are pitching the bills as jobs generators, although it may be more accurate to say they preserve jobs that might otherwise be lost if Congress doesn't find a way to keep highway and transit programs solvent.
President Barack Obama chimed in Monday with his own plan to spend nearly half a trillion dollars over six years on transportation infrastructure. But the president's plan is so much grander than anything Congress is likely to go along with that the administration has swung its weight behind the Senate bill, a bipartisan plan that more modestly proposes to spend $109 billion over less than two years.
House Republicans have proposed spending about $260 billion over nearly five years, but the bill is drawing fire from so many quarters that the ability of Speaker John Boehner, R-Ohio, to muscle the measure through to passage is in doubt. To build support with tight-fisted tea partiers for such a large spending bill, GOP leaders added sweeteners designed to appeal to conservatives, such as expanded offshore oil and gas drilling, approval of the controversial Keystone pipeline and a requirement that federal employees pay more toward their pensions.
The bill's treatment of mass transit programs has riled urban lawmakers, including New York and Chicago metro-area Republicans who may wind up voting against the bill. It eliminates the guarantee of a portion of federal gasoline and diesel tax revenues for transit, leaving programs vulnerable to future budget cuts.
"If you are a Republican from a city that has mass transit, how can you vote for this and go home?" said Rep. Jerrold Nadler, D-N.Y., who is sponsoring an amendment to restore a portion of fuel tax revenues for transit. Seven Republicans have co-sponsored the amendment.
And six GOP lawmakers have sent a letter to Boehner and other GOP leaders saying the transportation bill will stand a better chance of passage if provisions opening leases in the Arctic National Wildlife Refuge in Alaska to oil drilling are dropped. The provisions, which include opening the East and West coasts and portions of the Florida Gulf Coast, as well as ANWR, to drilling, are supposed to help pay for transportation programs. But the Congressional Budget Office estimates they would raise less than $5 million over 10 years for the federal government.
"Opening ANWR to drilling as a means to pay for the transportation bill is neither reasonable nor realistic," said Rep. Charles Bass, R-N.H., author of the letter.
The bill also eliminates locally popular federal programs that help underwrite bike paths, bike lanes and pedestrian safety projects, including the Safe Routes to School program, in order to concentrate funding on highways.
"The House bill takes us back to the dark ages," Transportation Secretary Ray LaHood, a former Republican congressman, told reporters Monday. He said he doesn't expect any Democrats to vote for the bill.
"I hope there will be lots of opportunities to amend it," LaHood said, to increase funding for transit and other needs. "Without amendments, this bill isn't going to pass."
But Rep. John Mica, R-Fla., chairman of the House Transportation and Infrastructure Committee and co-author of a major portion of the bill, said he is "fairly confident" based on his discussions with GOP lawmakers that the bill can pass.
"This is going to be the No. 1 job creator and economic generator bill of this entire session (of Congress)," he said. "I think members will rally behind what may be their last chance of getting jobs and a responsible blueprint for dealing with our crumbling infrastructure."
There will be changes made to the bill through a leadership-backed amendment that will address GOP members' concerns, Mica said.
"The bill isn't done," he said. "The final bill will be something conservatives can be very proud of because it has dramatic reforms and measures that people have called for for years."
But House leaders are being squeezed from both sides. If they give too much ground they risk losing support on the right. The Club for Growth, a free-market, anti-tax group influential with fiscal conservatives, has told lawmakers it opposes both the House and Senate bills because they spend too much money. The political arm of the conservative Heritage Foundation has objected to the way the Senate bill is paid for. Democrats and moderate Republicans, meanwhile, oppose sharp cuts to popular programs.
Floor debate could begin on the House bill as soon as Wednesday, with a final vote expected Friday. Lawmakers had filed 293 amendment requests with the House Rules Committee by Monday's 11 a.m. deadline. The committee decides which amendments can be offered during debate.
Debate began on the Senate bill late last week with a strongly bipartisan procedural vote of 85-11, and is continuing this week. The bill is co-authored by Sens. Barbara Boxer, D-Calif., and James Inhofe, R-Okla., ideological opposites who have managed to overcome substantial disagreement in an effort to pass a bill.
But Democrats, who control the Senate, have struggled to come up with the money to pay for the plan. Several GOP senators have signaled that their support for the bill could turn to opposition if changes aren't made to satisfy their fiscal concerns.
Like the House, the Senate has been hampered by a shortfall between current spending levels and fuel tax revenues, which are the main source of funding for transportation programs. Reductions in driving due to the economy as well as more fuel-efficient vehicles have lowered tax revenues. The budget office projects the trust fund that pays for highway and transit programs will go broke sometime in the 2013 federal budget year.
Without an infusion of cash from somewhere, the Transportation Department could be forced to slow down reimbursements to states for highway construction and other transportation projects. That, in turn, could lead to thousands of lost jobs.
Lawmakers could resolve much of their money woes by increasing the 18.4 cent-a-gallon gas tax and the 24.4 cent-a-gallon diesel tax, but that's politically unpalatable in an economy where unemployment remains high and many Americans feel financially insecure.
Indecision about how to shore up the Highway Trust Fund has long stymied efforts to pass a transportation plan. The last long-term plan expired in 2009. Congress has kept programs going through a series of eight short-term extensions. The current extension expires March 31.
